The concept behind this dish is to emphasise the importance of SHISO GREEN in this course.Chef told me even Shiso is no longer a rare spice you can see in daily life but comes in cooking, the colour of Shiso is extremely hard to keep, and that is why he came up with the idea that to freeze it with nitrogen.
The concept is about showing the transformation from kombu into thin candies.
